Ingredients for the Citrus Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Drink (produces 850ml, serving 10)
400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish
Directions
For the Syrup: Put the listed ingredients inside a pot, heat until it reaches a simmer, agitating so the sugar melts. Next, turn off the heat allowing it to reach room temperature fully. Decant to a sterilised bottle, cap it and refrigerate it in the refrigerator, it will last for around one month.
For the Premix: Pour the specified spirits and syrup into a large bottle, let it rest for 60 minutes, then pass it through best through a fine cloth, so it's perfectly clear.
When ready to serve: Measure 85ml from the cocktail base into a cocktail shaker containing ice, and stir gently for one minute to cool it down. Pour into a cold coupe glass or a similar vessel, garnish with the cranberries and finish with a brief mist with the mandarin essence over the drink.
